Description: Stirling Castle is a distinctly regular some what flattened cooking apple. Ground colour is bright green becoming very pale yellow with an orange-brown flush. Flesh is white, very soft, rather coarse-textured, juicy and acid. Cooks to a white puree with lots of fruit flavour, good for Apple Foam and Apple Cream.
History: Raised by John Christie, nurseryman, a Causeyhead, Scotland. Introduced by Drummond of Stirling, Scotland. First recorded in 1831.
